Gameday Grilling: Pork Rib Sandwich

Learn how to make a HUGE, head-turning sandwich!

AUSTIN, Texas — Want to create a gameday dish that will fill stomachs and turn heads? KVUE's got you covered!

Here's how to make a sweet and tender pork rib sandwich.

Ingredients:

  • Salt
  • Black pepper
  • Garlic powder
  • Paprika
  • Brown sugar
  • 2 cups apple juice
  • 1 rack of spare ribs
  • 1 loaf of French break

Instructions:

  1. Remove "silverskin" membrane from the underside of the ribs, and excess cartilage from around the ribs
  2. Cover both sides of the ribs in salt, black pepper, garlic powder, paprika and a generous amount of brown sugar
  3. Place ribs on the smoker at 240 F, allowing them to cook uncovered for three hours. Spray the ribs with apple juice once an hour during this step
  4. Place the ribs in an aluminum tin, face down.  Add enough apple to cover about 1/4 of each rack before covering the tin with aluminum foil and returning to the smoker for three more hours
  5. Using gloves to protect your hands from the heat, slide the bones out of the ribs
  6. Cover with your favorite BBQ sauce, then return uncovered ribs to the smoker for about 30 minutes, or until the sauce "sets"
  7. Toast an appropriate amount of the French bread – this step can take place at the same time as Step 6
  8. Pull ribs and bread off the smoker and allow them to rest for 10 minutes
  9. Assemble sandwich and enjoy!
